THE COFFEE

The coffee plant is native to Africa, has multiple varieties but all are typical of tropical climates, which dominate the areas of the world located between the Tropics of Cancer and Capricorn. 

Its discovery occurred more than 1,000 years ago, in the heart of Yemen, on Mount Chemer: a herd of goats belonging to a convent triscaban freely among the weak shrubs, strong enough to grow even in a volcanic soil and covered in lava. After a few days, this flock seemed to have lost the dream: during the night instead of sleeping, the goats chased each other without ceasing and did not stop to hit the moon. 

The coffee originated in Abyssinia, from where it was cultivated in Arabia and the rest in the Middle East. We have testimonies of its consumption since the eighth century, which was used as food, then as a fermented drink, later as medicine and finally as an infusion. It arrived in Europe in the sixteenth century by Venetian merchants. The Dutch introduced it into the colonies of South America, Guyana, Colombia and the Antilles. Later he arrived in the Caribbean and Brazil. 

America is for its climatology and orography, where the coffee seed found the most suitable place for its cultivation. Today, Brazil and Colombia are the largest coffee producers. The harvesting of coffee beans is a long and meticulous process. First they have to ripen the cherries until they reach a reddish color. The collectors go over the coffee trees and collect the mature cherries one by one. Thus the process lengthens until all the fruits mature completely. 

The truth is that coffee has been drinking for centuries, being the "wake-up" drink par excellence: natural stimulant both physically and mentally, source of socialization and almost mandatory culinary auction. The result is a more or less dark liquid, endowed with a certain substance called caffeine. Caffeine is a mild stimulant, whose interactions in the human body are due to its peculiar chemical form, corresponding to a methylxanthine, as in the cases of tea and chocolate.
